Rosemary Lemon Spinach Chicken Pepper Quesadilla…

Howllo Fellow Basset Hound and Healthy Feel Good Meal Lovers.  This is a meal for humans!

I thought I would post this here because oddly it is something you can make after the natural and holistic flea spray.  You have some of the ingredients so why not?  When you get the stuff to make the flea spray you can pick up a few more things for this feel good meal!

I bought a huge baked and breaded chicken breast from the Whole Foods Deli (no antibiotics no GMOs) and sliced it into 4 small plastic cups.  I normally put them in the freezer for future use.

I added a big sprig of Rosemary and about 2 tablespoons of fresh lemon juice.  I saute the mixture until the pan is hot and coated with some of the oils from the baked chicken breading.

Then you take it out of the skillet and pitch the rosemary.

Add a tortilla (more about that later)…

Add Havarti cheese and spinach…

Then add the chicken and more cheese…

Now for the top tortilla.

Depending on your skillet you might need a bit of oil.  I did not use any because I kept flipping it by laying a plate over top to change sides.

Press so the bottoms brown…Also, you can see the edges getting kind of crispy and sealing…

I use these totally awesome sprouted grains, flourless, organic, GMO free tortillas…

For being so healthy they are really good.

So…just thought I would share!

    Your recipe sounds delicious!! I am going to have to try it soon. A lot of my favorite foods in it. I am going to have to look for the tortillas near me. They look really healthy – thanks for pic on info.

    Mmmmm! That’s my kinda food. Now you just add sour cream, hot sauce, guacamole and some pico de gallo on top.

    Sandy and Ollie – If you have a Krogers you can find them in the Healthy Food section. They are in the freezer along with other products in their line. I did some research on what the healthest bread is and came up with this company via several food blogs. I also love the sesame bread from the same company. Bread is my weakness so I wanted to find something that was at least a bit healther that I could enjoy. Also, I have seen this line at Whole Foods.

    Thanks for info. I don’t have a Kroger’s near me but I think I will find them. I like that they are so healthy for you & they must taste good! I also notice that they are pretty low in sodium which is #1 thing in my cooking. Low sodium, low cholesterol, (beef once a month) & etc. My sister visited for a week a couple of years ago & was amazed nothing bothered her. She was really leery because of all the spices we were cooking with. She has a lot of stomach issues.
